BABY BOK CHOY

Baby Bok Choy

(so cheap, so easy, SO healthy!)

1. Wash and chop (as pictured below) BABY-Bok Choy (try to buy organic and fresh-looking!) (regular Bok Choy tends to be more bitter)

Three heads of baby-bok choy looks like a lot, but it will easily serve two people

2. Heat Kitchen Basics chicken broth on stove, add in bok choy. Salt and pepper to taste

3. Cook on medium for about 30 minutes, stirring often, or until reduced and soft

4. Serve! This can be a delicious, green side to a fish or chicken dish or a healthy snack!
