Coconut Cacao Energy Bites

SO SIMPLE. SO GOOOOOOOD. RAAAW 🙂 Vegan, gluten free, low FODMAP friendly, and freaking fantastic.

Tastes like a cookie with ZER0 GUiLT!  These are a great for a 4pm pick-me up snack or little breakfast treat.

Great for college students in dorms without kitchens: you will love this because you just need a little blender and a fridge!

ALL YOU NEED:

  • 1-2+ cups of pitted dates
  • 1 cup almonds and/or pecans
  • 1 tbsp almond butter
  • 1 tbsp coconut oil
  • 1 scoop of flax seeds (I use Spectrum Chia Cacao Blend!)
  • Optional: boost of hemp protein powder
  • A dash of chia seeds
  • cacao powder
  • coconut shavings
  • A taste of vanilla and cinnamon.
  • Optional: maple syrup

Blend in a mixer/blender.

Roll into balls. (Add more dates if they are not sticking!) Add maple syrup for extra sweetness if you wish!

Refrigerate for up to 3 weeks 🙂
