Vegan. Gluten free. No sugar added. Low fodmap. Flourless. DELICIOUS. Cook time: 30 mins
Perfect for a slow Sunday morning : )
Made best while listening to jack johnson.
Ingredients (makes 8 small pancakes):
- 1/2 c rolled oats
- Healthy handful of pecans
- 1 tsp baking powder
- Pinch of salt
- Cinnamon
- 1 ripe banana
- 3/4 cup coconut milk
- Handful blueberries
- 1 tsp vanilla
Top with: - 1 banana, sliced and caramelized
- Coconut flakes
- Blueberries
- Pecans
- Maple syrup
- 1. Set oven to 250 F. Combine dry ingredients oats, pecans, baking powder, salt, and cinnamon. Blitz in a food processor to combine and chop oats up
2. Mix bananas, coconut milk, and vanilla by mashing up or blending
3. Combine dry and wet ingredients. Mash up. Allow batter to set so the oats can absorb bananas.
4. Slice banana to caramelize; place on medium heat in a dry pan.
5. Heat coconut oil on med heat, then 1 tbsp at a time, add pancake mix to the pan.
Cook until sides are cooked and bubbles rise to the top. Sprinkle a few blueberries on top and flip.
Cook through on the other side
6. Place in 250 F oven to keep warm while the others cook
7. SERVE!:) Layer with caramelized banana in between, top with blueberries, coco flakes, and crushed pecans… And MAPLE SYRUP!
Yummmmmm. Watch them disappear in seconds.
